Brailzian Rice and Beans ======================== 2011-03-17, courtesy Kristin Ingredients ----------- 1 1/2 Tbsp vegetable oil 1 medium onion, diced 1 cup of rice (uncooked) 1 15 oz can of dark red kidney beans, drained 1 tsp salt 1 Tbsp parika and 1 dash of red cayenne pepper or 3/4 tsp chili powder Directions ---------- 1. Add oil in a medium saucepan, add dried onion; saute 1 to 2 minutes (do not allow to brown) 2. Add rice and stir well until rice browns to golden color. 3. Add kidney beans. 4. Fill can with water and add to pan. 5. Add salt, paprika, pepper 6. Bring to a boil, cover, and simmer for 20 minutes You can use 1 can coconut milk and brown rice, but add an extra cup or more of water, or let cook for an hour or more.
