Granola - Basic =============== 2011-03-16, courtesy http://www.joyofbaking.com/breakfast/HomemadeGranola.html , with influence from Kristin Ingredients ----------- 6 cups oats 4 Tbsp canola oil 3/4 cup maple syrup (bulk) 1/4 cup molasses 1 splash orange extract 2 splashes vanilla extract Directions ---------- 1. Heat oven to 325 F 2. Mix oats, syrup, molasses in 9 x 13 pan 3. Mix oil, orange extract, and vanilla extract together, then mix into oats 4. Bake for 20 minutes, stir, bake 10 more minutes Review and Variations --------------------- Tastes good. I baked it longer than 30 minutes; more like 40. I tried adding 1/3 cup of water to see what it's effect would be -- it seemed to make the oatmeal soft rather than clumpy. I baked it an hour, and it turned out crispy and slightly clumpy. I added only 3 Tbsp of grape oil and more like 1/2 cup molasses, ~3 Tbsp cinammon and no orange extract, cooked for 35 minutes, and the result was nice, and sticky. I tried reversing the proportions of syrup and molasses. 3/4 C molasses, 1/4 C syrup. I think it was quite tasty. The orange extract I think was also good. 2011-06-24 - 7 cups oats, 1/2 cup agave syrup, 3/8 cup molasses, 2.5 splashes vanilla extract, 25 minutes at 325.
