Oatmeal Bars ============ 2009-01-04 Ingredients ----------- 3/4 cup packed brown sugar 1/2 cup granulated sugar 1 8 oz container plain or vanilla lowfat yogurt 2 egg whites lightly beaten 2 Tbs vegetable oil 2 Tbs fat free milk 2 tsp vanilla 1 1/2 cups all-purpose flour 1 tsp baking soda 1 tsp cinnamon 1/2 tsp salt (optional) 3 cups oats 1 cup dried fruit (raisins, cranberries, etc.) Directions ---------- 1. Heat oven to 350 F 2. Combine in large bowl: sugar, yogurt, egg whites, vanilla, oil, milk 3. In medium bowl combine flour, baking soda, cinnamon, salt 4. Add contents of medium bowl to flour mixture and mix well. 5. Stir in oats and fruit 6. Spread onto 13 x 9 ungreased pan 7. Bake 28-32 minutes or until color is light golden brown Review ------ Healthy, and tasty. Can be eaten for breakfast.
