Red Harvest Quinoa ================== 2010-12-05 Ingredients ----------- 1 cup uncooked red or white quinoa 1 Tbs butter or margarine 1/4 cup chopped red onion 1/3 cup chopped celery 1/2 cup coarsely chopped baking apple 1 1/2 cup roasted vegetable stock (from 32-oz container) or chicken broth 1/2 cup orange juice 1/2 cup sweetened dried cranberries 1/3 cup toasted pine nuts 1/4 cup shredded Parmesan cheese 1/4 tsp salt 2 Tbs finely chopped parsley Directions ---------- Rinse quinoa thoroughly by placing in a fine-mesh strainer and holding under cold running water until water runs clear; drain well. In 2-qt saucepan, melt butter over medium heat. Cook onion, celery, apple and quinoa in butter 5 minutes, stirring occasionally. Stir in vegetable stock and orange juice. Heat to boiling; reduce heat. Cover, simmer 15 to 20* minutes or until all liquid is adsorbed and quinoa is tender. Fluff with fork. Stir in cranberries, nuts, cheese and salt. Sprinkle with parsley. Prep time: 20 min. Start to Finish: 40 min. 8 servings * I have found that it takes at least 5 minutes longer to absorb all the liquid--maybe because I put in a whole apple and it was more than 1/2 C? Anyway, you can either cook it longer or cut down on the amount of vegetable stock. Review ------ Yum, though a little sweet. Perhaps less orange juice?
