Quinoa salad with black beans ============================= 2010-12-05 Ingredients ----------- one can black beans, rinsed and drained chopped red onion, green bell pepper and red bell pepper (I use about 1/3 cup each) 1/2 cup quinoa rinsed and drained, then cooked according to package directions dressing: 2 Tbs olive oil 2 Tbs fresh lemon or lime juice 2 Tbs seasoned rice vinegar 1 clove garlic, minced salt & pepper Directions ---------- Combine ingredients for dressing--it is likely enough for doubling the salad recipe, certainly more than you need for the proportions above.
