Sweet Potato Black Bean Burritos 2 ================================== 2016-08-02 - Jon's recipe Ingredients ----------- 1 yam chopped 1 onion chopped 1 can cooked black beans (about 2 cups, can be from 2/3 cup dried beans) 1 tsp cumin (guess) 1 tsp cinnamon (guess) 1 dash salt 1/3 lb cheese (cheddar, mozzarella, or other) 8 flour tortillas 4 handfuls of spinach (optional) plain yogurt or sour cream (optional, I prefer yogurt) some salsa (good idea to have) Directions ---------- 1. Saute onion until cooked. 2. Either microwave yam (fast) or saute it with onion in step 1 (throw water in pan occasionally and put lid on to cook faster). 3. Add black beans, cumin, cinnamon, and dash of salt. 4. Add fresh spinach, cover for steam, stir - spinach will get soft. 5. Add cheese (I slice it because it is faster than grating). 6. Put mix in tortillas. 7. Optionally add salsa, sour cream or yogurt, and cilantro inside burritos. 8. Serve. Vacation variation ------------------ 1. Saute onions in a little oil until they are mushy. 2. Heat black beans in another pan. 3. Add a couple shakes of cinnamon to black beans. 4. Add cheese to black beans and stir. It will disappear into beans. 5. Microwave yam for 4-5 minutes after poking with fork. It should get soft. 6. Chop yam so pieces can easily be added to burritos. 7. Put various ingredients in tortilla, throw in medium spicy salsa. 8. Serve.
