Vegetarian Chili ================ 2008-12-31 Ingredients ----------- 1 Tbs olive oil mushrooms zucchini 1 can diced green chili peppers 1 onion 4 cups of kidney, adzuki, pinto, or black beans 28 oz can of chopped tomatos 2 Cups of tomato sauce 3 Tbs chili powder 1 carrot 12 black olives 4 cloves of garlic 1 Tablespoon dried oregano 2 teaspoons ground cumin 2 teaspoons paprika red pepper flakes or ground red pepper to taste 1 Tablespoon white wine vinegar Chopped cilantro Nonfat sour cream or yogurt (served on the side) Directions ---------- 1. Warm oil in large pot over medium heat 2. Add onions, carrots, green peppers, mushrooms, zucchini, olives, and garlic 3. Saute for 20 minutes 3. Add remaining ingredients except vinegar & cilantro, add red pepper to taste 4. Simmer for 30 minutes, stir to prevent burning 5. Add vinegar and cilantro near the end
